Yield: 8 servings
2 eggs, lightly beaten
1 cup farmer’s cheese or ricotta cheese
2 Tbsp. tahini paste
2 cups fresh frozen sliced bananas, partially thawed
¼ cup honey
1 ½ tsp. ground cinnamon
2 17.5-oz. packages frozen puff pastry, thawed
as needed, sesame seeds, untoasted
Preheat oven to 350°F. Line baking sheet with parchment paper. Combine 1 egg, cheese, tahini paste, bananas, honey and cinnamon. Set aside.
Divide puff pastry into 8 even squares. Place 2 to 3 Tbsp. filling in each square. Moisten half of the edges of the square with water and fold in half diagonally to form triangles. Seal edges together with a fork. Brush tops of pastries with second egg ad sprinkle with sesame seeds. Bake for 30 minutes, or until golden brown.
