Papetti’s® Easy Eggs® Liquid Whole Eggs #91200
olive oil
corn, roasted
green/red pepper, roasted and diced
red onion, diced
black beans, cooked
chorizo sausage, cooked
salt and pepper to taste
1 large flour tortilla shell, fried into a bowl
sharp cheddar cheese, shredded
jalapeño pepper, chopped
cilantro, chopped


Method

1. Pour olive oil into hot sauté pan; add corn, green/red peppers and onion. Cook until onion is tender.

2. Add black beans and chorizo sausage. Cook until mixture is hot.

3. Add eggs and season with salt and pepper. Stir until eggs are cooked.

4. Place tortilla bowl on dinner plate. Place hot egg mixture into tortilla bowl.

5. Top egg mixture with shredded cheese, jalapeños and cilantro.
Serve immediately.
