INGREDIENTS:6 lbs. ground turkey
¾ lb. pimento-stuffed olives, chopped
½ lb. onions, finely diced
3/8 cup parsley, chopped
2 Tbsps. garlic, minced
1 ½ tsps. cinnamon
¾ tsp. nutmeg
1 Tbsp. salt
1 ½ tsps. black pepper
1 ½ cups sour cream
1½ lbs. cucumber, diced
1 ½ cups feta cheese
24 pita bread roundsDIRECTIONS:1. Caramelize onions in a small amount of oil. Cool and reserve.
2. Mix together ground turkey, olives, onions, parsley, garlic, cinnamon, nutmeg, salt and pepper and form into 4-ounce patties.
3. Grill, or cook in 350° F oven to internal temperature of 165°F.
4. Combine sour cream and feta cheese in food processor and pulse lightly to combine.
