Ube (pronounced oo-bae), or purple yams, have been a staple of Filipino diets for years. But recently, these nutrient powerhouses, similar in scope to the sweet potato, have moved up the trend charts and found their way onto menus, recipe sites and YouTube videos. Ube’s vibrant color and unique flavor make them a versatile ingredient for chefs and home cooks alike.
