Cava is a sparkling wine from the Catalonia region of northeastern Spain. It is made in a method similar to Champagne, but with different grape varietals and a slightly different fermentation process, resulting in a distinct beverage experience. It’s also usually available at a considerably lower price than Champagne.

With a flavor profile that tends to be more on the earthy side and not as sweet as Prosecco, cava is often used as a versatile cocktail base.
