Inspiration: A classic Old Fashioned was the starting point, but it’s taken to a new level by substituting barrel-aged gin for whiskey.
Key Ingredients: Barrel-aged Bols Genever, sugar cubes, Peychaud’s Bitters, Regan’s Orange Bitters, St. George Absinthe, grapefruit oil and soda water

What Others Said: In an Esquire profile of The Hawthorne, mixology guru David Wondrich declared The Dutch Oven a must-try drink.
What the Judges Said: “The use of the slightly sweet Bols Genever (a classic Dutch gin), as opposed to the drier qualities of a London-style gin, gives this drink a perky personality. Emmerson, apparently gauging how barrel aging takes the edge off any hard liquor, has developed a kinder, gentler version of a classic cocktail. After one Old Fashioned, we’re out the door. After one Dutch Oven, we raised our empty glass for another.”
